4 medium carrots (peeled)
1/3 c salted peanuts
2 T red wine vinegar
2 T peanut oil
a few drops toasted (dark) sesame oil

1. Grate carrots coarsely or cut them into thin, 2-inch sticks. In a bowl, combine them with the peanuts. Add the remaining ingredients. Toss to combine.
