The amounts for these slaws are entirely up to you. Begin with equal parts oil and vinegar or lemon juice and go on from there. Taste and decide how you like it.

carrots, coarsely grated
parsley, minced
salt and pepper, to taste

1. American: White distilled or cider vinegar; vegetable oil; a little sugar.

2. Asian: Rice wine vinegar; sesame oil; a splash of dark sesame oil; some grated fresh ginger.

3. Middle Eastern: Lemon juice; olive oil; minced fresh garlic; ground cumin.

4. Italian: Red wine vinegar; olive oil; minced fresh garlic; fresh mint.
