If you can make this 3 or 4 hours ahead of time, the flavors will really blend…
2 T lemon juice
1 T liquid honey
1/2 t ground cinnamon
4 c (peeled) grated carrots
2 navel oranges
1. Combine lemon juice, honey, and cinnamon in a small bowl. Set aside.
2. Put the carrots into a serving bowl. Peel oranges and segment. If you wish, peel the membrane from the segments. Do this over the serving bowl, to catch the juice. Discard the membrane. Cut the segments into smaller pieces. Add to bowl. Pour in any juice on the cutting board.
3. Mix carrots and oranges together. Add lemon juice mixture. Stir to combine. Allow to sit for at least 10 minutes, before serving, or refrigerate for up to 4 hours before serving.
