4 T plain yogurt or sour cream
4 T mayonnaise
2 t Dijon mustard
2 t lemon juice
salt and pepper, to taste
2 c coarsely grated carrots
1 (red) bell pepper, cut into 1-inch strips
2 scallions, finely chopped

1. In a salad bowl, mix together the yogurt or sour cream, mayonnaise, mustard, lemon juice,  salt, and pepper.

2. Add the carrots, bell pepper, and scallions. Toss until well combined. Taste for seasoning.
