1 T olive or vegetable oil, plus extra for baking dish
4 c coarsely chopped green cabbage
1 onion, chopped
1 c shredded carrots
3/4 c milk
1/4 c broth (or more milk)
1/3 c shredded (Swiss) cheese
1/2 t caraway seeds
1 T chopped fresh parsley

1. Preheat oven to 350ºF. Grease an 11- x 7-inch baking dish (or a large enough baking dish).

2. Heat the oil over medium heat in a large skillet. Add cabbage, onion, and carrots. Cook, stirring frequently, until vegetables are tender, 5 to 8 minutes. Spoon into prepared dish.

3. In a small bowl, combine remaining ingredients. Pour over cabbage mixture. Bake for about 35 minutes, or until set and the top is golden. Let stand 5 minutes before serving.
