This is a mayo, or creamy dressing-based slaw. You can sub vegetable oil for the mayo if you prefer, though start with 1/4 cup oil and add more if you think necessary.
4 c shredded cabbage
2 c red kidney beans, drained
2 apples, chopped into dice or matchsticks
1 carrot, shredded
1/2 c mayo, sour cream, or yogurt (yogurt drained if not Greek-style), or a combination
2 T ketchup, or 2 T tomato paste with a splash of vinegar and a dash of sugar, or 2 T chili sauce
2 t lemon juice
1 t celery seed, optional
salt and pepper, to taste
1. Combine cabbage, beans, apples, and carrot in a serving bowl. Combine dressing ingredients in a small bowl. Pour over slaw and toss to coat evenly with dressing. Cover and refrigerate, if possible, for at least half an hour and up to a day before serving.
