A good side dish.

3 T olive oil
1 medium (red) onion, chopped
4 c thinly sliced cabbage, thinly sliced
3 medium potatoes, (peeled), cut into bite-size pieces
1/2 c water or broth, plus extra if needed
1 t dried dill or other herb
salt and pepper, to taste

1. Heat the oil in a large skillet. Add the onion and cook over medium heat, stirring frequently, until softened, about 5 minutes.

2. Stir in the cabbage, potatoes, water or broth, dried herb, salt, and pepper. Cover and cook, stirring occasionally, 30 minutes, or until the vegetables are tender and to your liking. Add a little more water or broth and/or lower the heat a bit if the vegetables are sticking. Serve hot.
