This is good with any radishes, really. If you don’t have any radish greens, substitute mustard greens, tat soi, spinach, arugula…

2 T vegetable oil
1 medium onion, finely chopped
3 c sliced or diced (peeled) daikon
3 – 4 c coarsely chopped daikon greens
1 1/2 t dry ginger or 1 1/2 T peeled, minced fresh ginger
2 cloves garlic, minced
1/4 c broth or water
1 t honey, agave, or maple syrup
1 T soy sauce
pepper. to taste

1. Heat  oil in a large fry pan and sauté onions over medium heat until translucent, around 8 minutes.

2. Add daikon, ginger, and garlic. Sauté, stirring, for a couple of more minutes. Add broth, honey, and soy sauce. Cover, bring to a boil, reduce heat, and simmer until for about 5 minutes.

3. Stir in chopped greens, raise heat slightly and cook, stirring, until greens are wilted and liquid has mostly evaporated, or keep the mixture a little loose, if you like. Season with pepper.
