1/3 c sour cream or Greek-style yogurt
1/3 c mayonnaise
2 T apple cider vinegar or white-wine vinegar
2 t sugar, honey, maple syrup, or agave, optional
1/2 t celery seed
salt and pepper, to taste
6  – 8 c very thinly sliced bok choi
1 large apple, diced or shredded
1 large carrot, shredded
1/2 c thinly sliced red or sweet onion; or finely chopped scallions

1. Whisk sour cream, mayonnaise, vinegar, sweetener, if using, celery seed, salt, and pepper together in a large bowl until smooth. Add bok choi, apple, carrot, and onion; toss to combine.
