Blueberry Maple Syrup I

1 c maple syrup
1 c blueberries

1. Combine maple syrup and blueberries in a heavy medium saucepan until reduced to a generous 1 cup, about 15 minutes. Cool to lukewarm. Refrigerate leftovers.

Blueberry Maple Syrup II

1 c maple syrup
3 c blueberries

1. Combine the maple syrup and 1-1/2 c blueberries in a small saucepan over medium heat. Cook until berries are slightly softened, about 4 minutes, then mash using the back of a spoon or a potato masher. Simmer until the mixture foams up a bit, another couple of minutes.

2. Remove from heat, strain to remove blueberry solids, then stir in the remaining 1-1/2 c blueberries. Refrigerate leftovers.

Blueberry Maple Syrup III

A spicy version. The proportions are yours to make up here.

maple syrup
ground black pepper, optional

1. Combine all ingredients in a saucepan and bring to a boil while stirring. Lower the heat and allow to reduce, leaving as thick a syrup as you like. Refrigerate any leftovers.
