This is a good sauce for other steamed veggies.
1-lb green beans, trimmed
1 T butter
1 T flour
1/2 t salt
1/4 t pepper
3/4 c milk
1/2 c blue cheese, crumbled
1. Steam or simmer beans until tender-crisp, or to your preference.
2. Meanwhile, melt butter in a saucepan over medium heat. Stir in flour, salt, and pepper. Cook for a minute or so, stirring continuously, until flour has lost its raw taste. Gradually stir in milk and stir constantly until mixture is smooth. Let cook for a bit until mixture thickens somewhat–don’t allow to boil. Remove sauce from heat and add the crumbles of blue cheese. Stir until the cheese is melted.
3. Either put cooked green beans on a serving platter and spoon blue cheese sauce over them or put green beans into saucepan and coat with the blue cheese sauce, before serving.
