4 medium plums
1-1/2 T butter or olive oil
1 large onion, chopped
2 bell peppers, seeded and chopped
2 garlic cloves, minced
2 whole cloves
2 t ground cumin
1/2 c chopped fresh cilantro, or other fresh herb
2 t lemon juice
1 t honey, agave, brown rice syrup or other sweetener
2 c black beans, cooked, drained
salt and pepper, to taste

1. Bring a saucepan of water to the boil. Add plums and cook for 30 seconds to loosen skin. Remove with a slotted spoon and set aside to cool.

2. Melt butter or heat oil in a large skillet. Add onion, peppers, garlic, cloves, cumin, and cilantro. Sauté gently, stirring often, until onion softens, about 5 to 7 minutes.

3. Meanwhile, peel plums, remove pits and chop pulp. Add pulp, lemon juice and honey to onion mixture. Stir to combine. Add beans, salt, and pepper, cover and continue cooking over low heat until peppers are soft, about 30 minutes. Stir often to prevent sticking. Taste for seasonings before serving.

Note: If you can, fish out the whole cloves, otherwise tell your diners to look out for them.
