Seeding the chili pepper(s) will make this dish less hot. This is a nice side dish for grilled meat or poultry.
1-1/2 c pitted sweet cherries, chopped
2 c cooked black beans, rinsed and drained, if canned
1 small (yellow) bell pepper, diced
1/4 c chopped onion
1/4 c chopped chili pepper, or up to 1 t red pepper flakes
2 T balsamic vinegar
1 garlic clove (or more), minced
salt to taste
1. Combine all ingredients in a medium bowl. Refrigerate at least 2 hours before serving.
