Good with burgers of any stripe, on hot dogs, tempeh…
2 large bell peppers (about a pound total)
1 c or so finely chopped onion
2/3 c apple cider vinegar
1/3 c maple syrup
1 t dry mustard powder
1/4 t red pepper flakes, or to taste
2 t finely chopped, peeled fresh ginger
3 cloves garlic, minced
1 t cardamom seeds, or 1/2 t ground cardamom, or 1/2 t cinnamon
1. Core, seed, and derib the peppers. Finely chop.
2. Put into a pot and add all remaining ingredients. Bring to a boil, then simmer for about half an hour, until the liquid has reduced to the consistency of a relish or to your preference.
