This is a good snack or appetizer. A mixture of different colored peppers is a nice touch.
2 bell peppers, green, red, purple, or a combination
2 T chopped black olives
3/4 c shredded Monterey Jack cheese, or other cheese
1/4 t crushed red pepper flakes
1. Preheat broiler with rack about 4 inches from heat.
2. Halve bell peppers and seed. Arrange on an ungreased baking sheet or other pan that can be used under a broiler. Sprinkle with olives, cheese and red pepper flakes.
3. Broil peppers until cheese is melted, about 3 minutes. Let cool for a few minutes then cut into strips for serving.
