5 or 6 medium-size beets
1 T minced fresh, peeled ginger
2 T prepared horseradish
1/2 c chopped parsley
1/2 t salt
1/4 c balsamic vinegar

1. Cook beets according to your preference. Allow to cool. Peel if you like. Either finely chop, grate, or purée the beets, by hand or appliance, depending on the kind of texture you’d like for the relish.

2. Transfer the beets to a serving bowl. Add the ginger, horseradish, parsley, salt, and vinegar. Toss to combine. Let sit for a bit to allow flavors to mingle, if you can.
