4 medium beets
1 T olive oil
1/2 c (red) onion, chopped
pinch cayenne pepper
1/4 t lemon zest
2 t lemon juice
1 T walnuts, chopped
salt and pepper, to taste

1. Preheat oven to 400ºF. Place beets in a small roasting dish with a little water, cover with tinfoil, and bake until tender (about 45 minutes to an hour). Cool, then peel, if you wish, and dice. Place in a bowl.

2. In a skillet, saute onion in olive oil for about 3 or 4 minutes. Add to beets along with the rest of the ingredients. Combine and taste for seasoning.
