This is great for chicken or pork.
2 c grated raw beets
1 1/2 c peeled and grated apple
3 T dry red wine
2 T honey
2 T lemon juice
1 t grated lemon zest
3 – 4 T prepared horseradish
salt and pepper
1. In a medium saucepan, combine the grated beets, apple, wine, honey, lemon juice, and lemon zest. Add just enough water to cover. Bring to a boil, then simmer until the beets are tender, 15 to 20 minutes.
2. Transfer mixture to a food processor or a blender and whizz until smooth. Return to saucepan, add horseradish, salt, and pepper. Reheat.
3. Serve warm.
