This is easy and tasty. Just throw the ingredients together and put into the oven. I imagine that one could simmer this on the stove top (very gently) or make it in a slow cooker. If you don’t have dried thyme and/or oregano, use other dried herbs.

1 1/2 lbs stewing beef, cut into 1-inch cubes
1/4 c all-purpose flour
1 large onion, chopped
1 lb potatoes, cut into chunks
3 large carrots, cut into chunks
2 c diced turnip
3 cloves garlic, peeled and minced
3 c water
1 1/4 c beef broth
1 c tomato sauce or chopped tomatoes or crushed tomatoes
1 t dried thyme
1//2 t dried oregano
1 bay leaf
1/2 t grated orange zest, optional
salt and black pepper, to taste

1. Preheat oven to 325ºF. In a large casserole or Dutch oven, toss beef with flour. Add the rest of the ingredients. Stir to mix. Bake, covered, for 3 hours, stirring occasionally (if you remember) until meat is very tender. Remove bay leaf before serving.
