Banana is the surprise ingredient here. Surprising also, is how good this is! And vegan, too!
1 large bunch spinach
1 large banana
2 t lemon juice
salt and pepper, to taste
1. Wash spinach. Place undrained spinach in a large pan and cook over high heat, shaking pan. Stir and fold spinach once, mashing down as it wilts, and cook about 4 minutes, until tender.
2. Remove to a colander and press with a back of a wooden spoon to get rid of excess moisture.
3. Place spinach and other ingredients in a food processor and puree until mixture is creamy.
