This is a good marinade for vegetables, meat, tofu or tempeh, that you plan to roast, grill or broil. Use some of the marinade to baste the food while it’s cooking, or boil it down and serve as a drizzling or dipping sauce. You could also use other vinegars here–sherry vinegar, rice vinegar, or white wine vinegar.

2/3 c balsamic vinegar
1 c freshly chopped herb, or a combination of herbs
1/4 c honey or agave
2 T lemon or lime juice
pepper, to taste

1. Combine ingredients in a jar and shake to combine, or, for a more pronounced herbal flavor, purée in a blender or food processor.
