Compotes are, to my mind, pies without the crust. Serve as is, or with ice cream; biscuits and whipped cream….

2 – 3 lbs peaches or apricots
2 T lemon juice
2 T honey, sugar, or agave, or not
1/2 t ground cinnamon
1/2 t ground nutmeg
1/2 t vanilla extract

1. Preheat the oven to 350ºF. Lightly butter a 2-quart baking dish.

2. If using peaches, blanch in boiling water for up to a minute. Refresh in a bowl of cold water, then slip the skins off. Pit and slice. Apricots just pit and slice. Toss with the remaining ingredients in the baking dish.

3. Bake in the preheated oven for around 45 minutes, or to your liking. Serve warm or at room temperature. The compote will keep for several days in the refrigerator.
