The best way to determine how much bread you’ll need is to cut a slice, then lay it into the baking dish, and continue until the dish is full. You’ll probably have to cut some slices to fit. Then take the slices out and proceed with the recipe.
This is not all that sweet, so you may want to have more maple syrup on the table.
French or country bread, cut into 1-inch thick slices
cream cheese, softened
2 – 3 c peeled peach slices
1/4 c chopped (toasted) nuts
1 c milk
1/3 c maple syrup
2 T butter, melted
1 t ground cinnamon
1 t vanilla extract
1. Preheat oven to 400ºF. Bring out a 13-inch x 9-inch baking dish. Prepare bread as per headnote.
2. Once you have all the sliced bread you need, spread both sides of each slice with the softened cream cheese and transfer to baking dish. Prick bread slices several times. Top with peach slices. Sprinkle nuts over peaches.
3. In a large bowl, whisk together eggs, milk, maple syrup, melted butter, cinnamon, and vanilla extract. Pour this mixture all over the bread. Bake for 20 to 25 minutes or until set in the center. Allow to sit for a few minutes before serving.
