Awesome is practically an understatement. You may want to put this dressing on everything you eat! Extra-virgin olive oil is somewhat overpowering here–pure olive oil is better. If you like a salty dressing, you can stop at 1 cup oil. The herb is really just an embellishment; this dressing can stand on its own.
1/2 c nutritional yeast
1/2 c water
1/3 c soy sauce
1/3 c apple cider vinegar
2 T chopped garlic
1/4 coarsely chopped fresh herb, optional
1 to 1-1/2 c sunflower/sesame/pure olive/peanut oil, or a combination
1. In a blender combine the yeast, water, soy sauce, vinegar, garlic and herb, if using. Buzz for a minute or so. Remove the little cap from the lid of the blender and slowly pour in the oil while the machine is running. Buzz for about another minute. Pour into a serving container.
