2 T extra-virgin olive oil
1 T lemon juice
salt and pepper, to taste
8 c arugula, washed, stemmed, coarsely chopped
2 – 3 medium asian pears, cored, thinly sliced or diced
2 oz prosciutto, or other ham, cut into thin strips, optional
Parmesan cheese shavings or gratings
1. In a large salad bowl, whisk together the olive oil, lemon juice, salt, and pepper.
2. Add the arugula to the salad bowl, and toss gently. Taste, and adjust dressing ingredients if you wish. Add the pears and toss with arugula.
3. Top with prosciutto slices and sprinkle Parmesan cheese over all. Serve.
