This serves two as a meal, four as a side salad.
1 large bunch arugula
2 T olive oil
1 T lemon juice
salt and pepper, to taste
1/2 c black cured olives, pitted and chopped
1 (3 oz) can sardines in olive oil, cut up if desired
2 scallions, cut into thin slices
4 slices Italian bread, toasted
1. Trim the tough stems of the arugula. Wash thoroughly, dry very well and tear into bite-size pieces.
2. In a large bowl, whisk together the oil, lemon juice, and salt and pepper to taste. Add the arugula, olives, sardines and green onions and toss well. Taste and adjust seasonings.
3. Serve immediately with the toasted bread.
