This is as basic and simple as it gets. Use any summer fruit here. The amount of sugar to add will depend on the sweetness of the fruit and the sugar content of the crumbs used (or your own sweet tooth…).
2 c fresh apricots, sliced
1 c graham cracker crumbs, or ginger snap crumbs, or chocolate wafer crumbs…
1/2 c brown sugar, or to taste
1 T lemon juice
2 T melted butter
1. Preheat oven to 350ºF. Butter a shallow baking dish.
2. Combine graham cracker crumbs, brown sugar, lemon juice, and melted butter in a large bowl. Gently blend in sliced apricots.
3. Spread in baking dish. Bake for about 25 minutes, until bubbly.
4. Serve with ice cream, whipped cream, yogurt…
