4 ripe apricots, pitted and coarsely chopped
4 T white wine vinegar
1/2 cup vegetable oil
4 T chopped fresh basil
sugar, to taste, optional
1. Combine apricots and white wine vinegar in blender, whizz until blended. With blender running, slowly add oil until thick and smooth. Add chopped fresh basil and pulse to combine. Taste. If you think it could use a hit of sugar, add some and pulse again to combine.
