Apple slices with a schmear of peanut butter is one of snackdom’s finest creations. Here we take this combination to another level as the basis for a salad. The salad can be a side salad to a meal, or a desert salad, depending on the ingredients. Either way is good. The ingredients are just suggestions. Go with what you have or want. You can also use other nut butters–almond butter is delicious! I like to eat a basic version as, you guessed it, a snack.

Side Salad:
3 – 4 apples, a couple of different varieties if possible, cored and chopped or sliced
lettuce leaves or other greens
grated carrot or beets
sweet red pepper, chopped or sliced
fresh chopped herb
etc.

1/2 c peanut or other nut butter, at room temperature
1 – 2 t lemon juice
1/4 c milk or coconut milk
ground pepper, optional (but intriguing)

1. Combine salad ingredients. Whisk together dressing ingredients. Pour over salad. Toss gently.

Dessert Salad
3 – 4 apples, a couple of different varieties if possible, cored and chopped or sliced
1 – 2 banana(s), sliced
grapes, blueberries, etc.
shredded coconut
chocolate, chopped; or chocolate chips; or use chocolate sauce in the dressing

1/2 c peanut or other nut butter, at room temperature
1 – 2 T chocolate sauce, if not using chocolate pieces, (or do both!)
1 T brown sugar
1/4 c milk or coconut milk

1. Combine salad ingredients, gently folding in the fruit. Combine dressing ingredients. Pour over salad. Gently toss.
