If you don’t have any oranges around, you can substitute lemon or lime zest, or 1 t of orange extract.
1 c water
2/3 c sugar
5 – 6 red plums (1-1/3 lbs)
1 – 2 apples
6 T red wine vinegar
1 T peeled minced fresh ginger
1 garlic clove, minced
2 t orange zest
1/4 t ground cinnamon
1. Put water and sugar in a heavy saucepan and bring to the boil, stirring occasionally, until sugar is dissolved.
2. Meanwhile, halve plums, remove pits, and chop into small pieces. Leave apple(s) unpeeled. Halve, core and either cut into small dice or coarsely grate.
3. When the sugar water comes to a boil, carefully add half the plum pieces, all the apple pieces, the vinegar, ginger, and minced garlic. Bring back to a gentle boil and cook for 5 minutes.
4. Add remaining plum pieces, orange zest, and cinnamon. Return to the gentle boil and cook until syrupy, stirring occasionally, about 15 minutes. Cool to room temperature for serving. If stored in the refrigerator, bring to room temperature to serve.
