This is a savory pudding or kugel. (Kugel is Yiddish for pudding.)  If you don’t have egg noodles on hand, substitute linguine, fettuccine, or pappardelle.

1/2 lb egg noodles
1/2 c raisins
1 c boiling water
6 eggs, slightly beaten
4 T butter, plus extra for baking dish
1/4 t cinnamon
3 apples, peeled, cored and chopped
yogurt or sour cream, for serving

1. Preheat oven to 375ºF. Butter a casserole dish or deep pie dish. Cook noodles according to package directions. Drain in a colander and rinse well with cold water. Drain again.

2. Meanwhile, soak raisins in one cup of boiling water for 10 minutes or until softened. Drain.

3. Combine cooked, rinsed noodles with all the other ingredients. Mix well and pour into prepared baking dish. Bake for 45 minutes or until browned on top. Let sit for 5 minutes before serving, with yogurt or sour cream.
