The amount of dressing used will depend on the size of both the apple and the daikon as well as your own preferences–make more or less of the dressing as you see fit.
1 t grated fresh ginger; or 1/4 t powdered ginger
2 T white wine or rice vinegar
6 T vegetable oil–sesame (not toasted), sunflower, safflower…
salt and pepper, to taste
1 apple, diced
1 medium-sized daikon, juilienned, diced, or grated
1 small red onion, thinly sliced
fresh chopped cilantro or parsley, optional
1. Make dressing: combine ginger, vinegar, oil, salt, and pepper and stir or whisk until emulsified. Set aside.
2. Combine apple, daikon, onion, and optional herb in a serving bowl. Pour dressing over and toss to combine. Let sit for a bit to allow flavors to blend, if possible.
