Peeling the apples is up to you–the peels add fiber and texture. If you use apple juice instead of cider, you may need to simmer the chutney a bit longer than called for.

2 lbs apples, (peeled) and sliced
2 c onion, diced
2 cloves garlic, minced
2 c water
2 c apple cider or apple juice
1 c apple cider vinegar
1 c brown sugar
1 c raisins
3 oz fresh ginger, peeled and grated
1/2 t cayenne pepper

1. Combine all ingredients in a pot and bring to a simmer. Simmer over low heat for 15-20 minutes, or up to 30 minutes if you’ve left the peels on, stirring frequently.
