Some chopped walnuts and/or dried fruit added along with the apples would be tasty…

1 1/2 c all-purpose flour
1 1/2 c whole wheat flour
1 t baking soda
1/2 t baking powder
1/4 t ground ginger; or apple pie spice
1 1/3 c buttermilk (or half milk, half  yogurt)
1/2 – 3/4 c sugar
1/4 c vegetable oil
1 large egg
1 t grated orange zest (optional)
2 cored and chopped apples, (smaller pieces bake better than bigger ones)

1. Preheat oven to 350ºF. Grease an 8-inch square baking pan.

2. In a medium bowl, combine flours, baking soda, baking powder, and ginger. In a large bowl, beat together buttermilk, sugar, oil, egg, and zest, if using. Add flour mixture to buttermilk mixture, stirring just until combined. Fold in the chopped apples.

3. Spread mixture into prepared pan and bake for 40 to 50 minutes, or until a toothpick inserted in the center comes out clean–start checking at the 30 minute mark. Cool in the pan for 10 minutes before removing to cook on a rack, or let cool entirely in the pan and serve from there.
