Tested on the Ritchie children. They approved. (So did Stew.)

2 c whole wheat pastry flour
8 T chilled butter, cut into small pieces
2/3 c sugar or other sweetener, divided
1 t vanilla extract
1 egg, lightly beaten
4 – 5 apples, (peeled), cored, sliced thin or diced
2 T butter, melted
1 t cinnamon

1. Preheat oven to 350ºF. Lightly grease a 13-x 9-x 2-inch baking dish. In a bowl or a food processor, combine flour, butter pieces, 1/3 cup of the sugar, vanilla extract, and egg. Blend just until it resembles small crumbs. Press the mixture into the prepared dish.

2. Combine apples, melted butter, cinnamon, and remaining 1/3 c sugar in a bowl. Spread apple mixture evenly over crust. Bake for 45 to 55 minutes, or until the fruit bubbles. Let cool some, then cut into squares while still warm.

Vanilla ice cream is awesome with this.
