This is excellent with many roasted meats. It’s also a good side dish or side salad, even a light meal salad: add some greens and cheese and serve with bread.
2 T butter or oil, divided
2 c thinly sliced red onions (cut in half moon slices)
dash of salt
4 medium size apples, (peeled), cored, cut into chunky dice
1 – 2 sugar, maple syrup, or agave
12 oz pitted prunes, diced; or other dried fruit, diced if necessary
3 T apple cider vinegar
1 t lemon, orange, tangerine, or clementine zest
1 t lemon juice
pepper, to taste
1. Melt 1 T butter or heat 1 T oil in a skillet. Add onions and salt and cook, stirring now and then, for about 5 minutes.
2. Add the other T of butter or oil along with the apples and sugar. Cook for about 7 minutes or so, until the apples have started to brown but are not too soft. You want the apples to retain their shape.
3. Add the remaining ingredients and bring to a simmer. Simmer until thickened, a few minutes longer. Serve warm or at room temperature.
