1/3 c buttermilk
1/4 c crumbled blue cheese
3 T chopped red onion or chives
1 t Worcestershire sauce
3 – 4 dashes hot pepper sauce (Tabasco)
salt and pepper, to taste
1 c diced, grated, or cut-into-matchsticks celeriac
3 T lemon juice
2 apples
additional chopped red onion or chives, for garnish

1. Mix together buttermilk, blue cheese, onion, Worcestershire sauce, hot sauce, salt, and pepper. Toss celery root with the dressing. Let stand for 15 minutes.

2. Meanwhile, put lemon juice in a bowl. Halve apples, then core. Cut into slices. As you work, put apple slices into the bowl with the lemon juice to prevent browning.

3. When ready to serve, remove apples from lemon juice and either put on individual salad plates or into a serving bowl. Top with celeriac mixture. If putting everything in a serving bowl, you might want to do a gentle toss. Garnish with chopped red onion or chives.
