Pears and/or apples and greens are good combination–flavors and textures play off each other well. You can use any number of dressings here–the one listed is a suggestion, albeit a tasty one. I think that fruit like pears and apples get lost in a dressing with extra-virgin olive oil and so I prefer lighter tasting oils such as sunflower or safflower.

1/4 c vegetable oil
1 T apple cider vinegar
1 T honey or agave, optional
1 bunch arugula, or mizuna, tat soi, endive…
2 Asian pears, cored and thinly sliced or chopped
2 (red) apples, cored and thinly sliced or chopped
2/3 c roasted (salted) winter squash seeds; or roasted pecans, almonds, walnuts…
1/2 c crumbed blue cheese, goat cheese, or feta cheese

1. Combine oil, vinegar, and honey, if using, in a small bowl.

2. Combine greens, pears, apples and squash seeds in a salad bowl. Toss with the dressing. Top with cheese. Serve. Enjoy.
