This is a variation of the classic Caesar dressing. It’s great with Romaine, of course, but equally good on other greens. Warm it and pour over greens such as spinach or arugula for a wilted salad. Have some bread on hand to sop up the dressing…
5 flat anchovy fillets, finely chopped
2 small garlic cloves, minced
2 T lemon juice
1 – 2 t white wine vinegar
black pepper, to taste
1/4 c extra-virgin olive oil
Parmesan cheese, shaved (with a vegetable peeler) or grated, to taste
1. Whisk together anchovies, garlic, lemon juice, vinegar, and black pepper. Whisk in olive oil. Taste, and add more of any of the ingredients to achieve balance and flavor to your liking.
2. Toss with lettuces or greens. Add cheese, then toss again.
