Good flavor combination!
2 T peanut oil, or other vegetable oil
2 onions, sliced
2 – 3 tomatoes, (peeled) and chopped or sliced
1-1/2 lbs spinach, washed and coarsely chopped (15 cups or so)
4 T peanut butter. or to taste
hot water or stock, to thin peanut butter
salt and pepper, to taste
1. Heat oil in a stew pot or large skillet with a cover over medium heat and add sliced onions. Cook, stirring occasionally, until soft. Add tomatoes. Stir to combine and cook for a minute or so to get the temperature back up in the pot. Add the spinach, in batches, stirring it into the stew. Cover, lower heat some and cook for 5 minutes, stirring now and then to prevent sticking.
2. Stir the peanut butter into some hot water to make a thin, smooth paste. Add to the stew and mix in. Season with salt and pepper, to taste. Cook for another 5 or so minutes, stirring now and then, add adding additional liquid to prevent sticking.
3. Taste for seasoning and peanutty flavor, adding extra peanut butter, if you like.
