We have a very good idea of what quantities of crops we need to store and how much fermented vegetables are needed. We know how to store the crops to keep them vital and tasting good, and know what crops to store together.

Beginning in November for approximately 18 distributions you will receive just picked greens (weather permitting), roots, apples and other storage crops. The roots include carrots, potatoes, onions, beets, celeriac, turnips, and radish. Storage crops include; cabbage, leeks, pumpkins and winter squash. The other part of the share is lactic acid fermented vegetables. We make kimchi, sauerkraut and other fermented vegetables. Organic and low spray apples are also available as part of the winter share. There are spring distributions in which we give out greenhouse greens in addition to our storage crops.
