We are excited to partner with Small World Foods who make an array of lactic acid fermented vegetables and to offer their fermented products as a Ferment Share. The Ferment Share will run consecutively with our Winter share.
The Ferment Share will include: original sauerkraut, curry sauerkraut, caraway sauerkraut, mild napa kimchi, mild daikon kimchi, and ginger beets.
A Ferment share will consist of 2 pints of your choice of any of these nutritious, naturally fermented foods per Winter share distribution (Winter distribution is once every 2 weeks for the months of January, February and part of March. Check our Winter Share tab for our distribution schedule! ). We will have a variety of the most popular ferments available at your pick up site for you to choose from so you can sample them all!
If the program is a success, we will be excited about future endeavors with Small World Food. ( such as supplying our cabbage, carrots, and daikon for the production of fermented foods and sharing with them our recipe for sauerkraut!)
Lactic acid fermentation-What better way to preserve our local ingredients to eat in the middle of winter!
Why would you want to eat fermented veggies? Lactic acid fermentation is a natural process that preserves and enhances the flavor of the vegetable that is fermented. Consuming fermented foods is good for you too! For example: Lactic acid fermentation produces acetylcholine which stimulates the bowels and assists with circulation of the blood. Lactic acid fermented products stimulate digestive functions by strengthening the acidity of the gastric juice when hydrochloric acid production lags and are rich in vitamin C (great for boosting our immune systems in our harshest season!) Small World Food is a worker cooperative based in Rochester NY. They only use local, organic products in their breads, sauces and ferments. Their product is unique to Buffalo and will only be available through our CSA (their sales are mostly local in Rochester and they deliver to NYC). They have a wide selection of fermented foods including kraut and kimchi.
